Fall is a time to enjoy the bounty of summer’s Harvest before eating more stored and prepared foods over the winter months. A good way to prepare for winter and support the body from exposure to the flu and colds is to add more fermented foods to your diet. This can include kimchi, sauerkraut, miso, kombucha and kefir. These foods support probiotic gut bacteria, which play a role in your body’s defense system. Read more about it in two books by Sandor Katz, Wild Fermentation and The Art of Fermentation.
Not only will these foods aid the immune response, but also they can affect your mood, thinking and how your brain and nervous system interact.
